2 boxes of CIRIO Red Beans
500g white potatoes
1 piece of fresh octopus
Thyme
50ml red vinegar
1 piece of lemon
Oregano
Basil
1 red onion -optional
2 carrots
2 white onions
1 celery
2 bay leaves
10g peppercorns
200ml white wine
Ginger
1 bunch of parsley
Preparation
- Boil the potatoes before and cut them into rounds. Season with salt, pepper, fresh parsley and place them on a plate.
- Boil water in a pot. Add ginger, squeezed lemon, peppercorns, onion cut in half, garlic, white wine, fresh oregano, fresh parsley, thyme and wait for it to boil.
- Meanwhile, put the red beans into a bowl, add salt, pepper, lime peel, a drop of red vinegar, fresh parsley and basil.
- Mix the salad and add a little olive oil.
- Prepare the octopus. Put the octopus to boil in a pot with spice. The octopus boils for 30 minutes per kg of product, so you need to calculate the cooking time depending on the weight of the octopus you have.
- After the octopus has boiled, remove it and cut the tentacles into equal pieces.
- We clean the tentacles of the brown shell that the octopus gets when it boils.
- Pour olive oil into a pan and add the chopped tentacles.
- Over the sliced boiled potatoes add the red bean salad and the tentacles.
- Serve with a little fresh parsley on top.
